“WHAT’S YOUR EXCUSE?” : [CHALLENGE 48]

We all have them...the voices in our heads that come up with amazing reasons not to work out, to pro- crastinate on a project, or to avoid someone we promised to spend time with. These voices are excuses, and we really all do have them and heed them more than we should.

How are your excuses preventing you from living your best life? How do your excuses steal you Mojo?

If you are having a hard time getting motivated, or staying motivated, take a look at why. What are your excuses and why are you sabotaging yourself? When you have a wedding or a reunion, have you noticed how determined you are? Nothing will get in your way of fitting into that special dress. Nothing stands in the way of you finding your “mojo”.

Taco Energy Bowls

Mama Bootcamp Main November 27, 2017

Ingredients

  • 1 lb. ground chicken, or turkey
  • 2 Tbsp taco seasoning
  • 2 cups cooked quinoa
  • 2 fresh organic corn on cobb, or 1 cup frozen organic corn
  • 1/4 cup shredded cheese
  • 1 lime, cut into wedges, to garnish

Handmade Salsa:

  • 1 pint cherry tomatoes, quartered
  • 1 jalapeno, seeded & minced
  • 1/4 cup red onion, minced
  • juice from a fresh lime
  • 1/8 tsp sea salt

Instructions

  1. Preheat a large skillet over med-hi heat.
  2. Cook chicken, stirring in the taco seasoning and breaking it up as you cook.
  3. Cook for about 10 to 12 minutes, until cooked through.
  4. In a medium bowl, combine all salsa ingredients and gently toss together.
  5. To assemble bowls, add the following to EACH: 1/2 cup of cooked quinoa, 1/4 cup corn kernels, 1/2 cup cooked taco meat, 1/4 portion of homemade salsa , a tiny sprinkle of shredded cheese , a lime wedge
  6. Cover and keep in the fridge for up to 4 days.

It is Thursday and it is Thanksgiving Day. All week long, you have avoided the treats in the break room. Ignored the ice cream your husband or roommate brought home. You have been on your game! And now it is Thanksgiving and the family gatherings have started. You have to go right?!?

In addition, you forgot your Grab ‘N Go’s and thought it was no big deal; after all it is Thanksgiving! Two holiday cocktails and a basket of chips later, you decide you might as well fill up your plate will all the holiday fixings and start over on Monday! So the weekend turns into a free-for-all, with you eating and drinking your way through Saturday and Sunday. You wake up on Monday feeling totally defeated, puffy, and depressed. Not the best way to start your week!

Wow! There are so many things going on with this story but we are going to focus on one thing... it was only Thursday! It was only one meal! “Stinking thinking” got you into a spiraling vortex of indulgence that you could not stop! No need to continue with one slip-up through the weekend. In Mama Bootcamp land, we start over once the meal is done. That means getting up on Friday and Saturday morning and getting to your Bootcamp! Hopefully you pounded some water before bedtime to start the flushing process. Then the weekend can be all about “clean eating” and having fun with movement (a.k.a. exercising)!

Meatballs in Pomegranate Sauce

Ingredients

  • 1 lb ground beef (grass fed if possible)
  • 1 tsp ground cumin
  • 1 tsp chili flakes
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1 large egg
  • 2 Tbsps avocado oil, or olive oil
  • 1 cup pure pomegranate juice
  • 1/2 cup unsweetened almond or coconut milk
  • 1 cup beef stock
  • Fresh chopped parsley, for garnish
  • 1/2 cup fresh pomegranate perils/seeds, for serving

Instructions

  1. In a large bowl, mix the beef with the ground cumin, chili flakes, cayenne pepper and salt. Add the egg and mix thoroughly until all is blended well.
  2. Form the meatballs, by taking one full tablespoon of the beef mixture and roll it between your palms until you have created nice, evenly round meatballs.
  3. Place a large skillet on medium heat, drizzle with oil, and when it’s hot enough start adding your meatballs. Sear them for about 2 minutes on one side, then flip them on the other side and cook for 2 more minutes.
  4. Add the pomegranate juice, beef stock and milk to the skillet, cover with a tight lid and let simmer for about 20 minutes until the meatballs are cooked through and tender.
  5. Sprinkle with chopped parsley and pomegranate seeds - serve hot.
